Globally, yellow carrots are the most popular variety, although they are rare in our country.We're more accustomed to the traditional orange, cylindrical carrot. And while you'll have to work hard to find the unusual yellow carrot, it's worth the effort, as its nutritional value is beyond reproach:

Description of varieties

Breeders know several varieties of yellow carrots, each with its own unique advantages. Furthermore, varieties also differ in shape, size, and flavor. Some are exceptionally good fresh, others are ideal for home canning and preserving, and still others are simply delicious fried or stewed. Let's take a closer look at the most popular ones.

Mirzoi 304

This variety was first obtained in the 1940s in the Tashkent region and is still widely grown not only by private farms, but even on an industrial scale.

The maturity period for this variety is approximately 115 days. This carrot can be grown in Russia, although it prefers a Central Asian climate. The average yield of this variety is approximately two kilograms per square meter.

Carrots are versatile and suitable for frying, stewing, and home canning.

Yellowstone

This hybrid variety is successfully grown in Russia due to its high resistance to most diseases. Its roots, unusual to the Russian eye, are spindle-shaped, long and slender, and bright yellow. This variety is early maturing and high-yielding, provided it grows in fairly loose soil.

Solar Yellow

A hybrid carrot variety whose name literally translates as "yellow sun." These roots reach 20 cm in length, also have a spindle-shaped form, and are good for frying. However, this "sunny" carrot is quite finicky. It requires consistently high temperatures (from 16 to 25 degrees Celsius), light conditions, and loose soil. It produces delicious, crunchy roots, especially loved by young children. This early-ripening variety can be harvested as early as 90 days.

Many Russian gardeners are wary of unusual vegetables like colored carrots, particularly yellow ones, mistakenly believing that their unusual coloring is due to high concentrations of genetically modified components.

However, this is not the case. The fact is that the yellow color of carrots is unusual only for us, whereas in most countries of Asia, Europe, the Middle East, and even the Mediterranean, yellow carrots are common and absolutely unsurprising. In fact, traditional Uzbek pilaf is prepared with the obligatory addition of yellow carrots. The recipe calls for half the carrots to be orange and half yellow; only then will the dish be truly delicious.
