  3. Once the container has cooled, puree the fruit with a blender or strain it through a colander. The latter method removes the plum skins, making the jam more delicate.
  4. Return the resulting fruit puree to the saucepan. Add 600 g of sugar, stir, and place over medium heat. Once boiling, reduce the heat and simmer for another 30 minutes, stirring frequently.
  5. Add the cocoa and remaining sugar to the pan. Stir and taste. If the jam is a bit tart, you can add a little more sugar. Cook the mixture for another 20 minutes. After this, the jam is ready to be made.

With walnuts

You will need 2 parts plums and 1.5 parts sugar, and walnuts are added to taste, on average 100 g per 1 kg of fruit:

  1. Pour warm water over the peeled nuts.
  2. Wash the plums, remove the pits, and chop finely. Place them in a saucepan and simmer for 20 minutes, stirring regularly and skimming off any foam. If there's little juice released, add a little water.
  3. Add sugar to the pan, stir, reduce heat and cook the fruit for another 40 minutes.
  4. Drain the water from the nuts, add them to the plums and stir.
  5. Keep the mixture on low heat for another 20 minutes. It should simmer gently.
  6. Remove the pan from the heat and start rolling up the jam.
