  • 800 g sugar;
  • 800 g red viburnum berries;
  • 1 glass of water;
  • 1 packet of vanilla sugar.

To impart flavor and a delicate texture to the jam, the berries are placed in the freezer for a couple of hours before cooking. Place two types of sugar in a heavy-bottomed saucepan, add boiling water, and stir. Heat the resulting syrup until all the sugar crystals are completely dissolved.

Bring the syrup to a boil and simmer for 5 minutes. Then add the berries. Cook for another 5 minutes, then quickly cool in an ice bath.

Let the jam cool completely. Then boil it again for 5 minutes. Next, pour the jam into sterile containers and seal with metal lids.

Seedless

To make seedless viburnum jam, you will need the following ingredients:

  • 750 g sugar;
  • 750 g viburnum berries.

Before starting, soak the berries in water for a while. Then, pour them into a colander to drain. Next, transfer them to a suitable container and cover with sugar. Let the berries soak for 8-10 hours. It's best to soak them overnight. This will allow the berries to release their juices.

Place the container with the berries, sugar, and juice over the stove. Continue simmering the ingredients for 30 minutes after boiling. Strain the thickened jam through a fine-mesh sieve to remove the pits. Scoop the jam out in small portions and press it through the sieve with a spoon onto a chilled saucer.

The squeezed jam should not spread across the container. The finished jam is transferred to a sterile container and sealed. Store it in the refrigerator or at room temperature.

The remaining pulp can be used to make compote or medicinal tinctures.

Seedless viburnum jam for the winter

In a meat grinder

Another simple recipe for viburnum jam involves grinding the berries through a meat grinder. When using a meat grinder, the berries are not subjected to heat treatment. This ensures that all the beneficial properties of the berries are transferred to the jam. The finished jam should be stored in the refrigerator only.

To make the jam, you'll need 1 kg of viburnum berries and 1 kg of sugar. Carefully remove all the berries from the bunch, rinse them, and dry them. Next, grind the berries in a meat grinder. Use a fine mesh grinder. If you don't have a meat grinder, you can use a blender.

Next, the pureed berry mixture is mixed with two-thirds of the total amount of sugar. The jam is poured into clean, sterile glass jars. Leave 1–2 cm of headspace at the top of the jars. The remaining sugar is poured on top of the jam.

With an apple

To enhance the flavor of viburnum jam, various fruits are often added. Apples are the most common. This jam can be made from the following ingredients:

  • 1 kg of apples;
  • 300 g viburnum;
  • 700 g sugar;
  • 50 ml of water.

First, wash the apples and viburnum berries. Peel and seed the apples. Next, grate them coarsely and transfer them to a saucepan. Pour water into the pan with the apples and simmer over medium heat. Once boiling, simmer for another 15 minutes.

Puree the viburnum berries using a meat grinder or blender. Be sure to strain it through a sieve. Pour the viburnum puree over the apples and simmer for another 15-20 minutes. Then let the jam cool for 2-3 minutes and then pour into jars.

Homemade apple and viburnum jam

With orange

To make orange jam with viburnum, you will need the following ingredients:

  • 1 kg of berries;
  • 2 oranges and 1 lemon;
  • 0.5 kg sugar;
  • 8 g vanilla sugar;
  • 400 ml of water;
  • salt.

The berries are placed in a saline solution for 2 minutes, and then soaked in cold drinking water for 5 minutes.

Next, prepare a syrup from half the sugar and water. Pour it over the berries. The fruit is left in the syrup overnight. In the morning, the berries are scooped out of the solution with a slotted spoon. Sliced ​​lemon and orange peels are added. The syrup is boiled for 5 minutes. Then the viburnum is added and boiled for another 10 minutes. The jam is left to infuse for 15 minutes and then sealed in jars.
