Wash the fruit and prick each one with a couple of holes. Place the sugar and water in a saucepan to make the syrup. Once the sugar has dissolved, add the pears. Simmer for 15 minutes and then remove from heat to cool. Repeat this process three times, adding citric acid during the final step.

While cooking, gently stir the jam over low heat. The finished treat is sealed in jars, wrapped in a blanket, and stored in a cellar or pantry after a day.
