However, this delicacy can be harmful to people with stomach ulcers, gastritis, diabetes, or increased blood clotting.
To prepare a dish with chokeberries, the dried berries are picked from the bunches, removing the leaves and stems, and then rinsed with water. Due to their bitter and astringent taste, more granulated sugar is almost always required than the berries themselves. Most cooks blanch the berries to soften the tough skin, allowing it to crack and release the syrup. The berries pair well with apples, citrus fruits, zucchini, plums, nuts, mint, lemon balm, and other herbs.

If you take the ingredients in the right quantities according to the recipe and pay close attention to the cooking process, you can get an excellent rowan delicacy.
Classical
Cooking time is about 40 minutes. You'll need 1 kg of berries, 300 g more sugar, and 1 cup of plain water.
Pour water and granulated sugar into a large saucepan, stirring occasionally during the cooking process. Place the stemless berries in a saucepan and blanch them in boiling water for 5 minutes. Then, add the prepared syrup and simmer over low heat for 15 minutes. Once the mixture has cooled, bring it back to a boil and simmer for another 15 minutes. Now the jam is ready to be sealed in sterilized jars.
Simple "Five Minutes"
The next recipe for chokeberry jam is also simple. Hence the name: "Five-Minute Jam." It takes about 40 minutes to prepare. It uses 1 kg of chokeberries and 2 kg of granulated sugar, or a 1:2 ratio.
The berries should be blanched in boiling water, usually for 5 minutes; sometimes, to soften the skin, they can be frozen for 30 minutes. After drying, the berries are ground in a blender or grinder, and granulated sugar is added. Bring to a boil, then increase the heat and simmer for another 5 minutes. Place the jam in 0.5-liter jars, cover, and sterilize in boiling water for about 20 minutes, after which it can be sealed.
Rowan berries ground with sugar
To prepare the following delicacy, which does not require heat treatment of the fruit and is therefore very healthy, you will need 1.2 kg of berries and 800 g of granulated sugar.
Wash the berries, place them in a colander to drain, and dry them. Then, place half the amount of berries and granulated sugar required in a blender and puree. Add the remaining ingredients and gently stir with a spatula. Divide the jam among the prepared jars, sealing them with sterile lids.
With lemon
This dessert takes about 70 minutes to prepare. You'll need 1.1 kg of berries, 300 g of tart apples, 320 g of peeled walnuts, 70 g of lemons, and 1.6 kg of granulated sugar.
Rinse the berries with water and place them in boiling water for 8 hours. After drying, take 1 cup of the infusion, mix it with granulated sugar, and simmer over medium heat until syrup forms. Add the berries and chopped apples to the container. After 3 minutes, add the chopped nuts, simmer for about 10 minutes, cool, and simmer for up to 4 hours. This will require at least 2 more heat treatments, allowing the infusion to cool between each one. Add the chopped lemon toward the end of the last stage.
After turning off the heat, cover the top of the basin or saucepan with cheesecloth, and place a flat plate on top. The treat is left to steep for about 10 hours and then packaged in jars, which are sealed with parchment paper and a rope or nylon lids.
With an apple
The jam is made from the following list of products: 1 kg of berries, 700 g of apples and 1.2 kg of granulated sugar with the addition of 400 ml of water, lemon juice obtained from a quarter of the fruit, and a couple of cinnamon sticks.
To create a dessert with an apple flavor and aroma, berries are blanched in boiling water and cooled. A syrup is made from 0.5 kg of granulated sugar and water, and the berries are added. After 5 minutes, the dish is removed from the heat and left overnight. The remaining granulated sugar is added to the syrup, and the bowl or saucepan is placed on the stove.
After peeling and slicing each apple, blanch the fruit for about 8 minutes, cool, and add it to the boiling berry mixture, adding the lemon juice and cinnamon. Boil the jam twice for 10 minutes, allowing it to cool between each cooking step. The jam is now ready to be jarred and sealed.
