Selecting a variety
The following varieties are widely cultivated today:
- White Egg is an early (65 days) eggplant variety imported from Japan. It is characterized by egg-shaped fruits with pleasantly tender, light-colored flesh, possessing a mushroom-like flavor and aroma. It is attractive due to its long fruiting period and the large number of ovaries, which contributes to a good yield. The eggplant bushes are compact, reaching a height of about 70 centimeters. The fruit weighs up to 200 grams and measures 10 x 8 centimeters. The plant tolerates sudden changes in climate and temperature, is easy to transport, and is resistant to viral diseases (such as tobacco mosaic). It is often grown both in greenhouses and in the open field.

- Lebediny is a mid-season variety (110 days) with white and light cream-colored, cylindrical fruits. They reach sizes of up to 22 x 8 centimeters with an average weight of 200-250 grams. Due to its tender flesh and lack of bitterness, it is widely used in cooking raw. This variety is characterized by high resistance to various pests and plant infections. It tolerates heat well and is tolerant of low temperatures. It grows well in unheated greenhouses in spring and is also often grown in heated winter greenhouses. This variety is characterized by a low-growing bush 50-65 centimeters tall with light green foliage and snow-white flowers.
- Ping Pong is a mid-season variety, producing a good harvest in just 110 days. It gets its name from the unique shape of the fruit, which resembles a snow-white ball. When ripe, the eggplant is small (90 grams) and has light green flesh without bitterness. It is prized for its excellent flavor and is popular in cooking. This variety is sensitive to temperature conditions and is therefore grown only in well-heated greenhouses. The bush is medium-sized, reaching a height of 50-70 centimeters. The fruits are easy to transport and have a long shelf life.

- Mushroom Flavor is a mid-season variety that yields fruit in just 100 days. This variety grows very compactly, reaching a height of 50-70 centimeters, and requires no staking. These white eggplants, with their tender, mushroom-flavored flesh, are very popular in cooking. They weigh up to 250 grams. The plant thrives in both heated and unheated greenhouses.
- Sosulka is an eggplant variety that produces a good yield in 110 days. It's notable for its unusual fruit shape, an elongated cylindrical shape weighing 160-200 grams. When ripe, the flesh is light, non-bitter, and quite juicy and tender. These characteristics make this variety particularly appealing to culinary experts. The plant itself adapts well to a wide range of climates and grows well in both heated and unheated greenhouses.

Growing
This variety of eggplant doesn't require any specific growing conditions. Cultivation follows the same standards as dark eggplants and is divided into two stages:
It should be taken into account that eggplants of this type prefer well-moistened fertile soils with sufficient light, but can also grow in soils with low acidity if the soil is prepared beforehand.
Infertile soil is enriched with a mixture of humus, peat and rotted sawdust in a ratio of 4:2:1 with the addition of ash, superphosphate, urea and coarse sand.
Eggplant bushes adapt well to temperature fluctuations, but in greenhouses it is recommended to maintain the temperature at +25 degrees.
Care
It consists of the following main activities:
- carrying out additional feeding (at least 3 times during the growing period);
- using the correct watering regime with a temperature of about +25 degrees;
- loosening the soil between rows (at least 5 times during the growing period);
- if necessary, shaping the bushes, removing side shoots;
- mulching the soil to protect it and improve its properties;
- attracting pollinating insects during flowering of bushes;
- the use of fruit formation stimulants by spraying plants.

Harvesting
Fruits should be removed from the bush using a knife or pruning shears so as not to break off branches. If a ripe eggplant isn't removed promptly, it becomes bitter and loses its delicate flesh. Typically, the fruit is cut off with the stem attached.
